You need the Alsa amixer or alsamixer binaries for the Touch architecture to be able to set the volume of the DF (or any other device with HW volume control).

I am using a Pluggin called EDO (Enhanced Digital Output, Written by Triode). I would have thought, he would have allowed for this???

The LMS universe, that includes EDO, works with SW volume control.
You need a HW volume control. That has nothing to do with EDO.
EDO introduces a slightly tweaked setup that can allow or improve
USB DAC playback. And that's about it. Improving means to get DACs
going without XRUNS (crackles). Triode introduces quirks to
the kernel and he also modifies the USB audio driver.
The Touch USB port is all but appropriate for USB audio playback anyhow.
IMO a waste of time. Even an RPI + squeezelite will probably do much better.
