I bet that would actually work but naturally I'd rather like to have ~20 bits monotonic so I can be sloppy at capture. However that may be wishful thinking, especially since I want to don't want to spend a lot.

Those noisy ADCs are probably monotonic, as they work off of low resolution high sample rate (sigma delta) modulators. They tend to have a lot of noise, particularly at higher frequencies, and this makes their specs look bad. To the extent that the noise is independent of the music it is likely to be benign, particularly if it is 10 - 20 dB below the noise floor of the analog source. (Not necessarily true with a live microphone feed, but quite likely with playback of a tape or LP.)
You will have to listen for yourself.
