I've been really enjoying Polish jazz in the last few days. Started with Anna Maria Jopek and then checking out some of her sidemen. Liking the pianists Michal Tokaj and Leszek Mozdzer so far. There is an astonishingly high level of musicianship and technical mastery here.
Also partial to composer/arrangers like Zbigniew Preisner.
What else should I look out for?

Go to Google (or whatever search engine you prefer) and type in Polish Jazz Recordings and do a search. So I did that and found the information at the link at the bottom.

look over the ECM catalog. There is some very fine Jazz coming out of Poland, Norway...etc.
NPR radio is another source.
A jazz guitar player, in the style of Tal Farlow. Very proficient. I heard an lp of his many years ago and haven't been able to find anything by him.

I think that Mozdzer's is the better one, but Jagodzinski is also worth listening to. He is more of a showman. The article linked below talks about some other Chopin jazz players. And then there is Rossano Sportiello--an Italian who also does a number on Chopin.
Leszek Mozdzer is much better, like you say. I really like his stuff.

Krzysztof_Komeda is most probably the most well known Polish jazz pianist
I have a few of his late 50's and 60's recordings. One of them is live at the Jazz Jamboree (3 cd's) superb music but the sound is not perfect
still worth getting.

His group named Simple Acoustic Trio had some great releases. I highly recommend their "Lullaby for Rosemary" and "Habanera" releases.
