Any time one hears people exclaiming that there is only ONE best recording of anything, BEWARE!
An opinion is an opinion is an opinion. And one person's favorite is not necessarily the favorite of others.
So far, we've heard mention of Blomstedt, Wand and Giulini. All good, although not all HI-REZ.
Wand was like Jesus with a baton for some critics, so everyone sort of jumped on the bandwagon, especially his last recordings with BPO shortly before he died. But Wand has his own approach to Bruckner, and it is not the only approach.
And frankly, I wouldn't consider any of those mentioned as really "hi-rez." If "hi-rez" is so important to you, I think you end up with some limited choices. Thielemann, which I personally dislike, but maybe others like it better. Blomstedt is on SACD, but the performance (it's a live recording) is (to some) pedestrian. Wand's live recording with the BPO (on SACD) is the first version of the symphony, which some people do not like -- and some people find the audience member coughing quite distracting. And Janowski -- some people love and others are bored with, but on Pentatone is definitely hi-rez SACD audio.
There is no ONE best. And by limiting yourself to hi-rez, you miss out on some really great recordings.

BTW, I would not call the Blomstedt LGO performance pedestrian - but, as you say, that's just my OPINION. ;-)
I used to have the Wand/NDR recording back when it first came out, and I didn't like the engineering. I'm presuming my system now (20-30 years later) might be more resolving, so it would be interesting to hear that performance again.

The Blomstedt/LGO complete Bruckner set received the award for best recording of 2013 by The Bruckner Society of America. So there! ;-)

...I am generally not a big fan of his conducting (yes, I often find him pedestrian and boring) BUT I find his Bruckner 8th to be very good - urgent and exciting (certainly not boring). Sound is typical Pentatone - very good.
