Salt revolutionized eating back in some era or another, to the point that it was a high-currency trade commodity. Like gold. Mined in the Sahara and transported in caravans.
Organic food stores carry any number of salt substitutes you can try, like Mrs. Dash.
Follow Ups:
Trader Joe's is a good place to find low salt products.
I've made some very spicy beans with very little salt.
One pound of pinto beans
Patak (India) Madras curry paste
granulated onion
Tomato paste
This is spicy without too much heat and very little salt.
I can make some very spicy dishes without salt but milder foods are more difficult.
Especially their Garlic pickle. Remember there is over 400mg of sodium per two measured tablespoons. Thats about 4000mg or two days worth for the whole jar.

Try some Mother's Best barbeque marinade sauce. Amazing amount of flavor with 135mg NA per tablespoon. I stir fry chicken with a cap full and I like it a lot. Another favorite is the El Mexicano brand of Chipolte peppers in adobo sauce. Fantastic for chili and soups. 150mg NA in 100g. Probably use less that 30g for a dish. T456
