My new laptop came with W8.1 - what a nightmare. So when the W10 upgrade came it was a relief. On setup you are given the chance to opt out of most the 'share your information' options. I opted out of almost all of them, choosing only to allow Microsoft to monitor how W10 worked on my computer.
The e-mail thing? While Microsoft doesn't read them, they obviously know to whom they are sent, from whom they come. But then, so does the post office when I send or receive mail and packages. Meh.

My laptop (for music) came with W8, I "upgraded" later to W8.1, what a non-revelation. W10 is a vast improvement over W8X (which I borderline detested). My home PC is still W7, unsure if I'll change it to W10, I did the sign-up in case I want to.
As for privacy; your cell phone company knows who you text/call, Internet providers know where you visit, debit and credit card companies know where you are and what you buy, your license plate is tracked... and even yes old fashioned "mail" is tracked.
So hard not to accidentally upgrade, as Microsoft posts links for "needed updates" on a regular basis. One ENTER too many and you have Win 10, whether you like it or not.
I'm sticking with Win 7, for now.
I'm pretty careful about my updates, but I'm sure a few have done that one by mistake.
