IF original, I think the 327/300 came with a Rochester Quadrajet. A VERY complex bit of engineering, they worked well but not the 'ultimate' performer of the simpler Holly.
You could probably find a bolt-in Carter AFB or a Holly (model unknown)

Complex and expensive stuff like a Vertical Mill or Lathe will let MOST of the DIY crowd out.

... A lot of grease monkeys are classic car buffs so they would have to know how.
Also, there are still a shitload (a technical term) of small engines which have carbies.

I'd think anybody 45-50 or older... I rebuilt a few in my days, I'm 51, and not a mechanic. Newly trained mechanics, who knows.
I had a "hopped up" 350LT1 4 speed Monza when I was younger. I used to run a Holley to go quick, but it needed rebuilding once in a while. So I also had a 625 Carter that I threw on while working over the Holley.
