We have these about once a month and try a different recipe each time. This one was good enough for a 2nd go...
With white corn on the cob
a fine salad with strawberries in it
and a worthy wine

As a fellow Baltimorean, I hold Raichlen in the highest esteem. Nevertheless, I suggest modifying this recipe slightly by putting a heavy weight on the hens once they're skin-side down on the grill. I use a 10-pound dumbbell weight.

The hens were delightful, I stuck 3 kinds of citrus chunks up their butts, such a flavor...
We used walnut wood and hickory chips with mesquite....
