Lundahl outputs will all handle that kind of voltage without a problem. Depending on whether you are planning a push-pull amp (LL9202/PP) or a SE amp (LL1691/80mA) there is a transformer for you in the Lundahl line. See http://www.kandkaudio.com/datasheets.html for data sheets.

Hi Kevin,
It will be a SET amp running 1kVdc on the plates of the 845 tube. Would these need to be totally enclosed due to this high of voltage being used?

Yes, they need to be under cover of some kind for safety.

LL1691 transformers? if so, which do you recommend for be shielding/safety?
Lundahl doesn't make covers large enough for these transformers. My largest Retro cover is not nearly large enough, either. Sorry...
