There are a range of options from the relatively inexpensive LL1591, through the LL1544A, which is the input transformer in your ST-70 mod, to the larger, but sonically similar, LL1690.

I see I have three transformer options. The choice of one is a secondary discussion. However, is there merit to the suggestion of having a buffer in front of the transformer?
What does that do and is it beneficial?

The merit of having a buffer immediately in front of the transformer depends on the driving impedance(s) of your source(s). I would say that if your source impedance is 500ohms or less, it's probably not of much, if any, benefit. Above that the benefit increases with the source impedance.
