No, you'll have mono sound thru each speaker. You will not have stereo sound.BTW, there's a Zenith Y825 on Amazon if you need another one. ;-)

Color me confused - so bear with me.
If I am taking a stereo signal over the two channel 3.5 mm connection to the Dot - and sending it to two RCA - left and right channels and then plugging left channel into one Y825 and the right channel into another Y825 why would I not have a true left channel and right channel stereo system.
Are the Y825's not acting as monoblock amplifiers and separate speaker speaker systems. Would I not have two independent audio signal channels. The radios would only play what they are fed. The source being stereo and each Y825 (or other similar style tube radios) acting as one of the individual channels.
If I am missing some obvious glaring error I would like to know cause this is itching my brain now, because logic is telling me it would work.

-No Abe, the Y825 is not a FM stereo radio, it does however have an FM band. It also has a single RCA input jack on the rear for an outside source, with a phono/radio switch.
This was the original poster's question: "With dual Zenith y825 and running my ECHO Dot through a 3.5mm to RCA stereo connections - one to each y825 mono jack, will it effectively (albeit poorly) work as stereo sound. It seems that it would work in a weirdly logical way."
-Dual Zenith Y825's. With 2 separate radios and the Dot feeding one channel to each amp, he would have stereo with each channel having it's own volume control. An ipod, cd player or anything else would work too.
I get it now. His setup will be stereo, but NOT if he plays the radio(s) FM receiver through it.
Right, he will be only using the amp section, like an integrated amp.
...when the thing is switched to "phono", radio circuits are bypassed and a high level audio signal is fed directly into the audio amp/output stage/speaker. In the phono mode it becomes essentially an amplified speaker with line level input....obviously mono. However, if the OP has two of these radios, he can feed the R signal from his BT device to one radio and the L signal to the other and voilą, stereo! The plan seems simple enough so I'm mildly surprised so many responders are having trouble understanding it.
One big caveat however: IIRC, this radio employes somewhat typical for the time line operated series string filaments and DC power supply complete with "death cap". Thus high potential for nasty ground loop hum if the plugs of the two radios aren't phased properly. Might also have relatively high voltage on the inputs that could zap a Bluetooth device right quick.
