since you do not own many titles (yet), you can go straight for the boxed sets---Complete Riverside, Complete Verve---for openers.
If you want individual album/cd titles start with these;

as a Music lover, Jazz Head and Audiophile, I am always happy to assist.
The Bill Evans catalog is very comprehensive. Those 1950-1960's recordings are essestial in my book. The 70's was filled w/ live sets and can be more hit-and-miss.
His final boxed set- Turn out the Stars, is a must own!
Keep me posted on where you decide to jump into his wonderful music.
