Prince- would have been great for an official taping.
In fact, during the 80's be was performing acoustic well before MTV started its tenure.
I cannot remember if D'Angelo did a show or not?
Though not actually not unplugged but along the same vein I have a copy of Elton John - Madman Across The Water done without the orchestra. If you want to hear it look for the title along with "rare masters".
Very uncluttered sound.
I also have heard whoever that is from The Who doing We Don't Get Fooled Again on an acoustic guitar and nothing else. I also have a buddy, though I haven't seen him for a while who did Stairway To Heaven on acoustic and also sang it pretty well.

even though i hate both jazz and acoustic guitar, i really clicked with badi assad's rhythms CD that i read about in an audio magazine and grabbed off a library shelf, eventually buying my own copy
mickey hart's planet drum used to be a really popular demo disc people don't seem to talk about much anymore.
along similar lines, there are numerous kodo/koto/taiko/daiko CDs featuring japanese drummers with those big booming bass drums. those sound pretty good, but musically, the akabanah track by "kodo" that's apparently blocked across the entire internet is a really nice bouncy piece of easy listening.
speaking of unplugged & easy listening, a lot of those old bachelor pad tunes sound really nice with their tube mics and minimalist 4 tracks at most recording style. esquivel... martin denny... les baxter... all have some great sounding tracks that hold up well against modern recordings. maybe not the "ultimate" demo track, the three suns' version of fever is a really hip sounding tune.
i guessing that stomp's ripper sole as heard on the tank girl soundtrack is all acoustic. it's a pretty good demo track that really pounds with a good subwoofer.
a lot of the tracks on gravikords, whirlies & pyrophones make excellent demo tracks for acoustic sounds, imaging & treble speed with 3 or 4 of the tracks featuring electronics. the one track that features weirdly vocal sounding pieces of bowed wood totally freaked my cat out where it made me laugh.
ravi shankar's chants of india has a really haunting sounding track called prahbujee that's a good test of both group vocals and imaging besides being musically sublime too. there's another OK track on the CD i can't recall the name of.
rykodisc's 2 CD "the best of both worlds" compilation has a huge variety of music & styles on it, but a standout track is "water drums 1" where some african kids drum a beat literally on water in a stream or pond. it's a really good test of image balance and imaging and can sound very convincing on the right speakers but artificial on speakers that otherwise sound great on everything else.
the track also shows up on the 3CD "big band" collection of drummers around the world. most of it's acoustic and there are a bunch of great tracks on each disc if you like drumming.
back to water drums 1, it comes from a CD of recordings of the baka forest people. it isn't always musically satisfying, but several tracks on it are amazingly realistic sounding. the other standout track i remember was a recording that sounds like sunset on a really hot day where tribal drummers do an amazing call & response thing with something like a swarm of crickets. there's a lot of beauty, power and palpable realism in that track.
that's all i can think of at the moment. i can't recall the performer or CD name of one of the percussionists that works with mickey hard doing his own thing. there's a couple of really great imaging test tracks on it that also sound interesting and that feature some acapella including this one female who's "da da da da" counterpoints sound really sexy to me when she's not trying to be sexy... she just has a sexy voice. i'll add it if i ever remember the CD.

I am always impressed w/ the sound and acoustics of each show.
Most impressive was the Acoustic Bass guitars. Really adds something special that accompanies the original studio recordings.
mkuller mentioned clapton and the Cindy Lauper acoustic album have great bass lines.
The Nirvana show is a reference disc as well. Impeccable recording.
I can remember the Pearl Jam, Nirvana and Alice in Chains, shows.
Not bad for a bunch of "grunge" guys.

Heard Patti Smith (with Lenny Kaye) do four acoustic tunes the other night.

Acoustic instruments always sound superior - always.
...Clapton Unplugged - also one of my best recorded CDs.
Jackson Browne-Solo Acoustic 1 & 2. Saw him do these sets live, in concert and he was amazing...as always.

...I much prefer his first Solo Acoustic album.
And I like him live with his band - the band I saw him with summer a year ago was one of his best.
(I saw him live the first time around 1975 at the Santa Monica Civic.)

those very early shows were pivotal in getting the whole "Unplugged" movement off of the ground.
I rather enjoyed both Don Henley and LL Cool J- for openers.
To date, these shows have never been released on cd or dvd?

The Corrs put on an excellent show. I have never missed an episode of this popular series. I would welcome it back onto the tv waves!
