I answered my own question. Here is a site that lists BD's recorded in 7.1. http://forum.blu-ray.com/showthread.php?t=159814

How many have returned to 5.1 after 7.1? Room size can be dealt with. The limited content sounds great but IMO the job my receiver does matrixing the sides makes the surround experience simply mo-betta.
About two months ago, I converted my home theater from 5.2 to 7.2. I already had the extra speakers (all Paradigm Studio Reference), so all I needed to buy was some speaker cable.
I could have done this a few years earlier, but I "thought" there just wasn't enough 7.1 material out there. I went to same link as posted above and was blown away by how much there really was.
In my case, it was nice improvement over what I had. I just wish I would have done it sooner.
