Yes - you should be able to change the default file format that Cubase saves audio files in a project to.Hunt around - you should be able to find it under Project Properties.
However, as I've mentioned before, this may not work if the total file exceeds 2GB.
What you should do is capture as 1 large file, but then break into tracks in Cubase, then save each track separately.
You should be able to do this in Wavelab as well - in fact I would recommend you do everything in Wavelab. Cubase is far too complex a program to use for recording off LP.
I would recommend upgrading from Wavelab lite to the full version of Wavelab - then you can do everything in Wavelab and not use Bronze at all since Wavelab can burn DVD-A. I like the click detection and correction feature in Wavelab.
The full version of Wavelab also supports UV22HR dithering, which is great for burning CDs.

Follow Ups:
As long as you export as N-Channel Split, you won't hit the limits.
This will give you the equivalent of a 12Gb Multichannel file.
A file at 1:44:00:00 at 24/48 will output a 5Gb export file, or 6 individual files of around 880Gb each.
So even at 24/96, you won't be close to the limits.

So the full version of Wavelab would probably be a good investment.
Depends what you want it for.
If you want it for DVD-A, then think carefully. It handles this in a very convoluted way.
