Hi Brian,
It's not the cheapest way to go, but I'd suggest at least taking a look at the Metric Halo products. The pros I know consider something like the ULN-2 as the go-to rig for location recording. For mics you might consider something like a Royer stereo ribbon. With a laptop, some cables, and that gear you should be able to grab very high quality recordings of pretty diverse sounds with a setup that would fit in a single Pelican case. I would probably use a Nagra IV-S tape recorder instead, but of course I am slightly disturbed ;^)>
