Will there be much difference among [1] and [2] in sound quality, because HDMI transmission has too much jitter?

If you are using this for music a comparative listen should answer your question, however, I agree direct to DAC would be better opposed to putting the TV in the middle.
If you are going to use the setup for movie soundtracks HDMI is hands down the best as optical cannot, or not allowed, to pass the lossless formats such as Dolby Tru-HD or DTS-MA. You'll be loosing the advantage of Blu-ray higher quality sound. Same if you have Blu-ray music discs.
Anyone know if this is a bandwidth issue or copy guard? If it's bandwidth I wonder if high res can only go so far.
[2] if at all possible. It is not jitter to worry about but the unspecified audio limitations of the output from the HDTV.
For a distributed A/V system, I use an HDMI cable for video, and a digital optical cable for audio, rather than use the HDMI cable for the audio interface. I'm pleased with that configuration, including the complete lack of noise caused by ground loop hum. If by your first configuration you mean using the digital optical output from a television instead of running the digital optical cable directly from the Blu-ray player, I'm sure you would find a direct-connection from the Blu-ray player to be a better sounding option to consider.
