One example that comes to mind is: Deutsche Grammophon produces excellent quality audi for classical music.
Are there similar companies in rock or jazz music?
I am starting my journey in the digital high quality audio, therefore some of my questions might seem simple , but....there are no stupid questions!

Not so much really. Earlier CD release were fairly atrocious especially for those of us who like a good soundstage and separation of instruments.
Telarc records tended to be much better, even some of the '80s released were pretty good. Another consistent high quality label was and is Reference Recordings.
Most labels, Sony, EMI, RCA, Naxos are quite inconsistent, although quality has tended to improve over the years.
Perhaps the very best classical recordings I've heard are from the San Francisco Symphony under Michael Tilson Thomas on its own label. These are all available as hybrid SACDs.

Even some of the higher end labels make ordinary sounding recordings. Prestige, reputation and money seem to have little to do with it. Some of the best recordings I have heard come from labels that are small,lasted very little time before going belly up or from a label that makes a bunch of terrible recordings then a gem once in a while.
It has more to do with the studio, gear, mics and the engineering and technique(s) used.

AAaahhh, I see what you are asking now! Well Verve and Blue Note spring to mind immediately for Jazz, but then again then are a lot of reissues on alternative labels. If you like "audiophile" jazz/classical you might want to see what ECM has to offer.
For classical, Decca, CBS/Sony Classical, Philips...
However, you need to remember that the Label doesn't dictate the sound/recording - it is the producer and tonmeister. The label is no guarantee of either artistic merit or recording quality!
Plenty of good labels have disappeared or been absorbed into the Big groups like Universal.
I suggest you should look for the artists you like and find the links to new artists who may be influenced by them.
In general ALL pop recordings are terrible on CD IMO! If you have a good system, you will be hard pressed to find a pop recording that isn't compressed and "in your face".
