You won't find any modern dac chips that will work with the old Sony circuit. It's not just a matter of soldering a new IC. The circuit would require a complete re-design.
Use the Sony's digital output an use an outboard DAC.

The output from the CD reader circuit is bit clock, L/R clock, and data; signals common to all modern DAC chips. The 707ESD chips involved are huge, 42-pin DIP chips; 2 PCM64 and 2 CXD1305S. They are very easy to remove and leave ample room for replacement daughter PCBs with more modern parts.
I have a 707ESD and a couple PCM1704 ... I might give it a try.

If your tech knows what he/she is doing, has experience with digital interface design, and can do tight PCB layout, you shouldn't have to tell him/her anything except what DAC chips you want to use and how much you are willing to spend.
