I was skeptical going into the purchase that so many filtering/up-conversion options are more about marketing than SQ. Why wouldn't a manufacturer settle on the one or two filters and sample rate that they preferred? However, surfing the various high-end forums, I found strong opinions but little consensus on which filtering/up-conversion selection sounds best. So what else is new under the sun of audio? I'll admit I'm having fun with this. Each setting does sound different. BTW, on this player SACD is a mind blower vs. RBCD.

Perhaps which filter / setting is used is dependent on the source recordings sampling rate? I have no idea, just a guess and something I would factor in when comparing.

DSD stays at DSD.....
Redbook is converted to 1 bit DSD via FPGA.

DSD does not stay at DSD. It is converted to multibit (PCM) so that volume control can be performed and then converted back to DSD128 using a sigma-delta modulator.
Yes, the process includes filters. Every block labeled "upsampler" or "downsampler" contains a filter.

My question was, are the modulators that perform the upsampling considered filters? Or are there customer defeat-able filters like the "low-pass" setting filters on other DACs are in the chain: (like at the end of the above block chart).
Speaking for myself, - I am largely a "set it and forget it" kind of person, and I really don't want to be messing around and switching options like crazy. Plus, - any DAC that I want will serve double duty as a pre-amp with cable TV DVRs, disc transports, Streamer transports, BluRay players, etc

The choice of filtering options for best sound depends on the particular equipment used to make individual recordings and the particular settings the engineers used. (Plus the playback system and listener's taste as well.) The choice of options is most critical at the lowest resolution format (e.g. Redbook). It is less critical when dealing with higher resolution material, but there can still be audible effects.
The impact of computer upsampling on sound quality vs. sending the raw file to the DAC is likely to be greater when using an inexpensive DAC that uses stock chip filters. It is likely to be minimal when using a state of the art DAC that uses bespoke filters, but still the issue of filter choice will remain when playing lower resolution recordings.
