I found three DVD players at the local Goodwill for super cheap: a Sony DVP-S7000, a Sony DVP-NS900V, and a Denon DCD-2200. Which of the three is the best for playing back Redbook CD's? Which of these three would be the best transport? I read online that many people find the Sony DVP-S7000 to be one of the best transports ever for CD playback...

Look for Pioneer DV-505.
It uses DVD data playback for CD (read the drive does not read CD synchronous as most DVD players, but as DATA disk, buffering data in RAM) and it has one of the best consumer DAC's - the Pioneer Legato Link...
It also did great on SPDIF out. Never found anything that came close in a cheap DVD Player.
