It doesn't really require a special recording, in fact, many or most multichannel releases have the surround channels synthesized anyway. This isn't as horrible as it seems. Convolving reverb, for example, can do what a concert hall does, using actual "recordings" of the hall's impulse response, and do a better job of getting it to the correct channels than microphones can.
