I've heard these old Beatles albums many times in mono and stereo

and I much prefer the stereo, despite the hard right/left pan. IMO, I'm hearing more of what's going on in the music listening to the stereo mix, especially on some of the tunes you cite.
For example, George Harrison's terrific 12-string electric on "Every Little Thing" seems to stand out much better in stereo than in mono.
I just can't warm up to rock n roll in mono, no matter how hard I've tried. Listening on headphones in particular--mono makes me feel like my sinuses are clogged.
