I just changed the plug on my Garrard and kept the two-lead power cord. The links should be in the terminal block for the power and neutral line. The third line if you are putting it in goes to the chassis for ground.
I've never heard a Garrard in stone so it's hard to say how it would sound. I would think that you could do a top piece in granite but then you have to be sure that it's well connected to the wooden portion of the plinth as granite can ring. I have heard of bolts being epoxied on to granite and then bolting and epoxying the granite to the wooden portion of the plinth (not with a Garrard but with a diy TT that was really nice).
