Those are great choices. For me his solo piano music is his greatest achievement in many ways. No point in leaving any of it out, there are several excellent complete sets. The Preludes, Images, Suite Bergamasque, Children's Corner suite, Arabesques (these two short pieces are among my top favorites), En blanc et noir and Pour le piano definitely, the other piano duets and various other short pieces (that include some of his most famous tunes) are all essential.
Then, his late great chamber music pieces: the trio for flute, harp and viola, and the cello and violin sonata; the earlier string quartet; the Rhapsody for clarinet, and the three Nocturnes for orchestra (including Nuages). I envy you if you are discovering all of this for the first time.
