I have the EMI. Doesn't sound "mushy" to me, though it was recorded in E Germany w/E German Engineers. How I wish Bishop/Parker team had spoken up! I don't know about Angel vs EMI, but it's not one of EMI's better recordings; (think Previn) it reminds me of their Kempe/Strauss sound.
K used youthful voices which--to me--pays-off handsomely in the gorgeous, sublime quintet (quartet?) towards the end of the opera. The soaring solo music for tenor works for me as well.
If your Angel set is quiet, I'd just enjoy it. I can't think of another "audiophile" label more prone to noise and/or poor grading than EMI's. You might drive yourself crazy (as I have) having crappily-graded Box sets shipped across the Atlantic at mega expense, only to discover that they're full of sounding hairlines.
