Based on everything you've written, what you're hearing is VOCAL sibilance in the recordings. As for the Jack Johnson release, the mixing engineer likely went the extra step in de-essing the files used for mastering the CD but not the vinyl version.
All due respect to the well meaning fellows who are insisting it's a problem with your equipment, but it's not and no amount of futzing around is going to change it.
OTOH, if you WANT to futz around swapping cartridges and changing settings in a futile attempt to eliminate sibilance in the recording itself, knock yourself out. I've already 'been there, done that.'
