4) If I wanted to wire the attentutor just straight to the pots and not do the shunt-to-ground tweak, how would I do that? Using the layman's terms I use above (center pin positive to left/right pot lug, etc)?

First you'd get rid of the resistor, and then wire it up according to the description Chris O gives in the first sentence of his reply.

By the way, the whole claimed advantage of shunt attenuators is based on an erroneous notion.
