Exactly: you can't replace a 12AX7 in any phono stage with a 5751 because the plate resistance, transconductance and mu are all different between the two tubes. The plate resistance of the tube in a phono stage is part of the computation to define the equalization curves. If you change the plate resistance, you change the slope of the equalization curve. It might not be enough of a change to affect your listening experience, but when you have the phonostage engineers guaranteeing an RIAA accuracy to .5dB, it seems fatuous to destroy that accuracy by using the wrong tube.
