The 6sn7s provide the voltage gain for your amp. They should be critical in determining the final sound quality. You have a very high quality and expensive ($8k) amp, it deserves the best 6sn7s . This means NOS of course. Consider building a small stash of some of the best 6sn7s to roll from. This tube last a long time and you can always sell any you don't like.
I break 6sn7s into two groups, the fast, detail ones and the rich tone ones. Some are a cross between the two.
In the speed and detail group, try Sylvania 6sn7W. The metal based ones have been hunted to near extinction, but the small bottle versions can still be found for reasonable money. Great tubes. Most Sylvania bottom getters qualify, including the VT 231 which is excellent and the three hole "bad boys". The Chrome top Sylvania GTAs are a lesser tube but still good. Raytheon brown base WGT and Hytron 6sn7GTs with the bottom getters and T plates are also good. Any of the ealy Tung Sol 6sn7s (including the rarefied round plate version and the latter "mouse ears") are great. The Russian 1578 hole plate may be the best of the bunch, but can be noisy in my experience.
In the rich tone group, RCA VT 231 and Red base 5692 along with black glass National Union are the best examples. The GE 6sn7GTA is a lower priced and easy to find alternative.
The black glass Ken Rads also have a big tone and great bass.
