You are relatively fortunate in wanting a 12AT7 or ECC81 etc. These 12--7 tubes are easier to find in good shape and with a wider variety than other 12--7s. Since prices are relatively low in general for good old stock, you would be doing yourself a favor by educating yourself by rolling as much as you care to.
The type of sound you like may be present in any number of tubes but you should really try the anti-Telefunken, for educational purposes, which is the made in Great Britain, Mullards. Mullards are described by most as being warm with a mellow bass and some say rolled off treble. I didn't always find a slow syrupy tube but you might run into one. Some say the holy grail AT7 is the Brimar Trustee sub brand model 6060, and you can find these. I don't think the 6060 was all that special but you really have to decide for yourself.
