I'm not Jim, but I can offer guidance on a couple of those points.
First off, the 7189s are really hard to find, the Russian mil equivalent works well (6p14p I think). Old stock Ei 7189 are just great, and were even made using the old Amperex equipment. Don't use a 6BQ5/EL84, the S-5000 runs these tubes hard - 425v and 20ma current!
Telefunkens ALWAYS sound best in these amps for the 12AX7s for some reason. If you don't use the phono section, you can put cheapos in there and save the Teles for later use. You cannot just omit the two phono stage tubes, they run DC filament generated by the bias supply and it will throw your bias voltage off it you pull them out.
7199s are 'spensive, but at least they last a while. I've always found the RCAs to be a bit more enjoyable than the GEs, but Sylvania are good too.
Try to find an old stock Amperex or Mullard for the rectifier. In all honesty, I've never had one wear out on me, and I put 6-8 hours on my S-5000 amp every day.
