I would put the tubes back in and try again.
No sound from either channel sounds odd. It is highly unlikely that both tubes would fail.
If the filaments lit up the way they were supposed to, something may have not been seated properly. I have a 300B PP amp and that happened to me once (but only on one channel).
Looking at the Cary, my guess is that the center 6SN7 input was not seated properly. That would be the most logical explanation.
If you are in my neck of the woods (SE PA), I would be happy to look at or test the Sophia 300Bs.
