Since stored energy is 1/2 C * V^2, the difference may not be as big as it appears. 100 uF at 400V holds the same energy as 10,000 uF at 40V. As mentioned, tube rectifiers have peak current limitations that prevent using large capacitors, but tube amps I use have solid state rectifiers and a few hundred uF of filtering.
