The best I can find on the original la100 has the following complement
Tubes:
(2) 0A2 Regulator
(2) 6EM7
(2) 12ax&b (5751 is a medium mu of this variety, so is the 6350)
Most likely your 10EM7 is a bad sub by a previous owner. It is part of the power supply so it is probably not that audible if the heater is a bit starved. He probably found them cheap and plugged it in and music came out.
For the 12A*7 (12AX7, 5751, 6350, etc.) audio tubes, your circuit uses one of the tubes for gain for both channels and the other tube for a cathode follower for the output of both channels. That they are not identical is not a big deal because they are each shared by both channels. Not so critical which tube is used, but I would stick with the 5751 in both places.
