Grading/Testing NOS Tubes

I've run accross some NOS stock; my first encounter in fact.

Is it customary to test NOS tubes that are in unopened boxes, or are they normally sold 'as-is'?

Is it important to establish an accurate age of the tube? Production dates aren't on the boxes but I hate to open anything up. Then again, how would you know what type of plates, getter, etc. you've got on hand without taking a peek?
