I've owned and heard speakers at a variety of levels, including $100k. Those I've owned the more expensive models did have improvements to offer, or else I wouldn't have purchased them.
The shows can give a basic idea of a speaker's character but I'd recommend not forming an opinion based on one audition. It typically takes a few or more to be sure. As an example, I was not a big fan of Sonus Faber, they weren't offensive by no means, just didn't do anything for me in a dealers store. I recently heard a SF model driven by Jadis and another by a Mac system which showed the SF can sound very good properly matched to what's driving them. I'd say this holds true for any speaker, it's about good synergy.
With all that being said the room acoustics is extremely important. This is why you typically see MBL rooms treated at the show. I suspect some others do as well but I've noticed MBL to be consistent in that matter. Also, I've heard certain models of speakers sound great and hear them in another room, building or with other gear, and that same model sound not so great.
There will always be speakers, or any type of gear, costing a fortune that won't appeal to our taste at all. We have to trust our own ears.
