I have S-8, mostly music. I bi-amp them:
Cary/AES Sixpac tube monoblocks drive the tweeet/mids
Parasound 2250A drives the woofers, C-5 center and S-4 rears.
FOr music, the bass on the S-8 is so tight and detailed and goes plenty low.
For music I had to back off the bass in my pre/pro cause it was just too much.
I realize you have a big room, but being a 90 % music guy, If you have a really good and powerful amp, the music will be wonderful, and I cant imagine you will miss a sub. In Fact, all my audio/HT buddies assumed I had a sub.... the bass was that strong even in movies.
