Without having heard recording you used, or knowing which open baffle speakers you used, it's really difficult to comment. I can think of at least three obvious possibilities.
First of all, as with all speakers, there are good and bad open baffle speakers - you don't specify the speaker model. Maybe the speaker itself is at fault. That doesn't mean that open baffle speakers are bad, just that particular model.
Second, speaker placement may have been a problem - open baffle speakers are designed to be placed well away from the back wall - if they are placed too close to the back wall then dipole cancellation results in a loss of bass and thin sound. It is unusual for open baffle speakers to sound good in the same location as a standard cone in a box speaker.
Third, the recording itself may be harsh - since another recording you listened to sounded fine, did you try more recordings?
