Mmmmm, if you proclaim you are "very knowledgable about electricity", methinks you are probably an EE ... so measurement is king (rather than listening)?? IMO, EEs are those guys who gave us ss amps with vanishingly low distortion (because low distortion is good, right?) ... which sound totally uninvolving to listen to. :-))
But I'll bite - after all, all I'm suggesting is a very simple and inexpensive experiment ... rather than continuing to spout EE textbook theory! :-))
As I'm sure you know, Cat5 is litz wire - ie. the 8 strands are individually insulated. The aggregate cross-sectional area of 8 x 24g solid-core wires is roughly the same as the 16g stranded which the OP quoted (slightly thicker - not enough, I suggest, to have such reduced R that it skews the experiment).
I've done the experiment and have the T-shirt! So I now eschew stranded wire ... except for power cords because it's almost impossible to find solid-core mains wire.
Go on ... be inquisitive ... just do it! :-)) You have nothing to lose but your (mental) chains!
