There is still a lot of music I haven't got around to - I rarely listen to anything before Beethoven. And in the "great" category will mostly be later 20th century music. But I'm pretty familiar with most things on the OP's list.
What I have a lot of pleasure discovering is great performances. I listen a lot on Youtube these days. I'll take a work like Winterreise or Tristan und Isolde and listen to maybe 20 versions of it. Sometimes I'll like one of the usual suspects but a lot of the time I find better alternatives to my ears. Like for Bartok Quartets the Tatrai and Hungarians. For Winterreise I now listen to Josef Greindl. For Tristan I'm loving Lorenz as Tristan and Grob-Prandl as Isolde, though in this case Melchior/Flagstad 1936 is justly famous.
