I have been a fan or Mr. Hersch for quite some time now. I'd recommend:

Fred Hersch in Amsterdam: Live at the Bimhuis

Fred Hersch : Concert Music 2001-2006 (the Chorale that he does 24 variations from is from, I believe, St. Matthew's Passion)

The Fred Hersch Trio + 2

Fred Hersch: Live At Maybeck, Volume 31

Fred Hersch & Julian Lage — Free Flying

AND MY FAVORITE:

Leaves of Grass (Fred Hersch Ensemble doing a song suite based on Leaves of Grass by Walt Whitman)

I also have his DVD, which allows you to much better understand the man behind the harmonies: Let Yourself Go: The Lives of Fred Hersch.
