The key is to develop a system and stick with it.

For all my classical works the artist field consists of the last name of the composer and the last name of the principal performer (soloist, conductor etc.). On the Ipod, I select the genre heading which will then show me a list of all of the works by Adams, Albeniz, Bach, Bartok etc. subdivided by principal performer.

Also when I rip from CDs - my primary method of populating ITunes - I use the join tracks option for multi-movement pieces.
