If I were limited to a single composer that most often encompasses the breadth and depth of music that's most satisfying, I'd name good ol' J.S., but through music history, there's a thread of composers that produce for me, moving and/or memorable, complete musical experiences:
Gregorian Chant
Machaut
Tallis
Dowland
Byrd
Monterverdi
Gesauldo
Froberger
JS Bach
Scarlatti
Rameau
Haydn
CPE Bach
Beethoven
Schubert
Chopin
Liszt
Mahler
Satie
Britten
Bartok
Prokofiev
-it's not necessarily profundity, nor passion, wide range or narrow focus, intellectual structure/ inventive harmony, or plain entertainment value, but a combination of all of them- an intensity of the composer fulfilling their self-imposed concepts.
