I haven't used AIFF, but I would not expect a sonic improvement from using a different format. The only reasons why you might consider changing formats would be to save space or reduce bandwidth when streaming. FLAC requires approximately 1/2 the space and bandwidth of AIFF or wav. For CDs, I don't think it really matters much. Disk space is cheap. But some people have had problems streaming hi-res over a Wi-Fi network in wav or AIFF format but not in FLAC format.

If you do decide to change format, you don't need to re-rip your existing files. You can use a format converter.

I use dBpoweramp's ripper and music converter and I can highly recommend them. The ripper can automatically pull metadata and cover art from multiple metadata sites. It's also good for secure ripping of damaged CDs. But if you're happy using iTunes, there isn't a good reason to switch.
