In addition to the classic Hedges, there are several other fine acoustic guitar recordings on the Windham Hill label.
A wonderful Tony Rice album is "Duets" with David Grisman. Each cut features a different classic guitar and mandolin. Will your system quality allow you to differentiate them?
I enjoy all the Alison Krause and Union Station albums I've heard, great audio quality and bluegrass instrument virtuosity.
Speaking of virtuosity, several of Doc Watson albums have been reissued so not difficult to find.
For classical recordings the Romero family consistently offers high quality.
Now for a "sleeper" - look for "Old And In The Way" with Jerry Garcia (yes, the same one!) and Dave Grisman. Great fun bluegrass style with one of the Dead.
Not sure why some others ignored the Acoustic request, but lots of worthwhile recordings have been suggested.
