It really depends on several things -
Can your room handle the extra channels?
Is your HT system placed properly in that room?
Are you employing a decent quality room correction method (Audyssey, Trinnov, etc.)?
Will your receiver be able to put out enough power without going into distortion (clipping) due to the extra demand required by the additional speakers?
Is the quality of your source material up to the task?
I went from 5.1 to 7.1, to 7.2, then to 9.2 with each step an improvement.
One qualifier, however - I only use my HT system for movies. I listen to music through a two channel tube powered system located in an entirely separate room. Some enthusiasts think that a single system can be all things to all people but after years of experimenting I've discovered that isn't necessarily true.
