RE: Drum kits seem. . . .

It depends purely on how the drum kit was recorded and mixed.

For example it is very typical in Rock/Metal to use a spaced pair as overheads (besides the individual drums being close mic'd) which is than hard panned left&right during mixing. This tends to result in a larger than life representation.

Jazz and Reggae usually use coincident pairs for the same purpose which tends to lead to a more realistic sized kit.

Of course these are just rules of thumb and exceptions abound as there are also the Recorderman Technique, the Glyn Johns Method etc.
