First and foremost, remember this:The sound that is picked up by microphones, and ultimately reproduced through speakers, is *not* the equivalent of sound coming from an acoustic instrument (nor is it equivalent to the sound coming from the on stage amp/speakers of an electric or otherwise amplified instrument).
At the same time, just because musicians and their instruments may not be behind your sitting position in a performance hall (unless the composed/performed music specifically calls for antiphonal effects that require musicians be placed in different parts of the space), reflected/ambient sound throughout the hall does indeed surround you.
That said, I have not personally heard a surround system play *music* in such a way that would make me an instant multi-channel convert, but that's not saying much, because I haven't spent much time listening to surround systems - for film or music. I even try to spend as little time as possible "auditioning" two channel gear, for if I give in to the obsessions some have allowed themselves to indulge in this regard, it would rob me of too much of the already limited time I have to sit down and listen to recorded music (incidentally, most of the music I listen to on my stereo is not the music I perform; there's so much wonderful music in this world, I like to hear what others are up to as well).
Of course, take all of the above with the appropriate grains of salt, for I'm a musician, so naturally, I have a lousy stereo! :)
