Suggestions for VCR tape to digital converter.

My wife wants to archive our old VHS tapes of the kids, etc. into a digital format for storage ie: hard drive, disc, whatever. They need a bit of editing in the process, mainly editing out a bunch of unwanted video.

Any suggestions for a simple system/converter with reasonably good quality that she can accomlish this with?
